Love having my pancakes with creamy and delicious coconut yoghurt and fresh strawberries.
The coconut yoghurt is dairy free, packed with probiotics and it’s super creamy and delicious. It also comes in many wonderful flavours and it’s my absolutely fav coconut yogurt! Must try !
To make the pancakes I have used following ingredients:
2 cups of plain flour
4 tablespoons of coconut sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon vanilla essence
2 cups of almond milk
2 tablespoons of Apple cider vinegar

Stir the wet ingredients together and set aside for 5 minutes
Mix all the dry ingredients
Pour the liquid mixture to dry ingredients and mix until smooth batter forms.

Make 2 initial pancakes 🥞 by Pouring 1/3 cup of batter onto none stick pan and and cook on low heat until golden about 1 minute on each side.

Add 1 teaspoons of pink pitaya powder to batter, mixing it well and continue making 2 pancakes before adding extra 1/2 teaspoon of pink pitaya powder for another set of pancakes and continue adding 1/2 teaspoon of pink pitaya powder to the batter to get deeper shade of pink.

*you add pink pitaya syrup made my heating up 1/2 pink pitaya with 1 tablespoon of sugar and 1/2 teaspoons of potato starch. Strain the mixture.
Enjoy with vanilla coconut yoghurt, strawberries 🍓 and maple syrup on top.
