2 tsp. vanilla extract
2 cups finely shredded coconut
3 ounces high-quality organic soy-free dark chocolate
Instructions:
Prepare Coconut Base:
In a small saucepan, warm 3/4 cup of coconut oil and 1/4 cup of coconut butter until melted.
Remove from heat and stir in 2 teaspoons of vanilla extract.
Mix in 2 cups of shredded coconut until well combined.
Pour into an 8×8 baking dish, spreading evenly.
Refrigerate until firm, about 1 hour.
Chocolate Layer:

Add 3 ounces of dark chocolate and 2 tablespoons of coconut oil to the bowl.
Heat over medium until the chocolate and oil melt together smoothly, stirring occasionally. Be careful not to let any water splash into the chocolate.
Once melted, remove from heat and carefully pour over the chilled coconut base, spreading evenly.
Chill and Serve:
Refrigerate the dish for a few more hours until the chocolate layer sets.
Cut into bars using a sharp knife.
Keep refrigerated until ready to serve.
