Ingredients:

For the Oreo Crust:
24 Oreo cookies, finely crushed
1/4 cup unsalted butter, melted

For the Cheesecake Filling:
3 (8-ounce) packages cream cheese, room temperature
1 cup granulated sugar
3/4 cup sour cream
1/3 cup unsweetened cocoa powder
1 teaspoon pure vanilla extract
3 large eggs
1 cup cherry pie filling

For the Ganache Topping:
2/3 cup heavy cream
6 ounces semi-sweet chocolate, chopped

For Garnish:
Fresh raspberries
Chocolate shavings

Instructions:
1️⃣ Crust Preparation: Preheat your oven to 350°F (175°C). Mix the crushed Oreos with melted butter and press the mixture into the bottom of a 9-inch springform pan. Set aside.
2️⃣ Cheesecake Filling: In a large bowl, beat cream cheese and sugar until smooth. Mix in sour cream, cocoa powder, and vanilla. Add eggs one at a time, mixing just enough to incorporate. Fold in cherry pie filling. Pour this mixture over the Oreo crust.
3️⃣ Bake: Place the cheesecake in the oven and bake for 50-55 minutes, or until the center is set but slightly jiggly. Remove from the oven and allow to cool completely on a wire rack.
4️⃣ Ganache Topping: Heat cream until it just begins to simmer, then pour over the chopped chocolate. Let sit for 1 minute, then stir until the mixture is smooth. Pour the ganache over the cooled cheesecake.
5️⃣ Chill: Refrigerate the cheesecake for at least 4 hours, allowing the flavors to meld and the ganache to set.
6️⃣ Garnish and Serve: Just before serving, garnish with fresh raspberries and chocolate shavings.
