Ingredients:
8 tablespoons unsalted butter, cut into pieces
½ cup water
½ cup whole milk
¼ teaspoon salt
2 teaspoons sugar
1 cup all-purpose flour
4 eggs, room temperature
2 cups heavy cream
1 teaspoon vanilla extract
2 tablespoons sugar
Powdered sugar for dusting
Instructions:
Preheat Oven: Set your oven to 400°F (200°C).
Cook Butter Mixture: In a saucepan, combine butter, water, milk, salt, and sugar. Heat on medium until it starts to bubble.
Add Flour: Stir in flour until the dough forms a ball. Cook it against the pan sides for a few minutes to cook the flour.
Cool Dough: Transfer dough to a mixing bowl and let it cool for a few minutes.
Incorporate Eggs: Beat eggs in a separate dish. Gradually add them to the dough while mixing on low. Reserve some egg for an egg wash.
Pipe Dough: Transfer dough to a piping bag and pipe 2-inch mounds onto a baking sheet, spaced apart.
Apply Egg Wash: Dab the tops with wet fingers and brush with egg wash.
Bake: Bake for 20 minutes at 400°F, then reduce to 350°F and bake for another 10 minutes. Do not open the oven during baking.
Cool: Remove puffs from the oven and let them cool on a rack.
Whip Cream: Beat heavy cream, vanilla, and sugar until stiff peaks form. Pipe this cream into the cooled puffs.
Serve: Dust with powdered sugar before serving.
