Peeps Marshmallow Cheesecake

Indulge in the whimsical delight of Peeps Marshmallow Cheesecake, a festive dessert perfect for spring celebrations! 🌸

Ingredients:

For the Crust:
1 ¼ cups graham cracker crumbs
1 tablespoon granulated sugar
4 tablespoons butter, melted
For the Cheesecake:
24 ounces cream cheese, room temperature
7.5 ounce jar marshmallow creme
1 ¼ cup granulated sugar
1 teaspoon vanilla extract
4 large eggs
1 cup full-fat sour cream
½ cup Peeps Coffee Creamer
For the Whipped Cream:
1 cup heavy cream
2 tablespoons powdered sugar
Gel food color (lemon yellow, leaf green, sky blue, violet, fuchsia)

Instructions:
1️⃣ Prepare the Crust: Mix graham cracker crumbs, sugar, and melted butter. Press into a 9-inch springform pan. Bake at 325°F for 15 minutes. Cool.
2️⃣ Make the Cheesecake: Beat cream cheese and marshmallow creme until smooth. Gradually add sugar, vanilla, eggs (one at a time), sour cream, and coffee creamer. Mix well.
3️⃣ Color the Batter: Divide batter into five bowls. Color each with gel food coloring, from lemon yellow to fuchsia. Layer colored batter over the crust.
4️⃣ Bake: Set the pan in a water bath and bake at 325°F for 85 minutes. Cool in the oven with the door slightly open, then refrigerate overnight.
5️⃣ Decorate with Whipped Cream: Whip heavy cream with powdered sugar. Color with food colors. Pipe onto the cheesecake.
