Cheesecake Brownies

Dive into the delightful layers of rich chocolate and creamy cheesecake with these irresistible Cheesecake Brownies. They are the perfect treat for any gathering, guaranteed to delight your guests!

Ingredients:

Brownies:

12 ounces semi-sweet or bittersweet chocolate chips
6 tablespoons unsalted butter, cut into cubes
¾ cup granulated sugar
1 teaspoon vanilla extract
3 eggs, room temperature
¼ cup unsweetened cocoa powder
⅓ cup cornstarch
½ teaspoon salt
1 cup mini semi-sweet chocolate chips

Cheesecake Layer:

8 ounces cream cheese, softened
½ cup granulated sugar
1 egg, room temperature
½ teaspoon vanilla extract

Directions:
1️⃣ Prep: Preheat the oven to 350°F. Spray a 9-inch square baking pan with cooking spray and line with parchment paper.
2️⃣ Brownie Batter: Melt chocolate chips and butter in the microwave, stirring every 30 seconds. Stir in sugar and vanilla. Add eggs one at a time, mixing well. Whisk together cocoa powder, cornstarch, and salt in a separate bowl and add to chocolate mixture. Stir until smooth and glossy. Mix in mini chocolate chips. Pour two-thirds of the batter into the prepared pan.
3️⃣ Cheesecake Layer: Beat cream cheese until fluffy. Add sugar, then egg and vanilla, mixing until smooth. Spread over the brownie layer.
4️⃣ Assemble: Dollop remaining brownie batter over the cheesecake layer and swirl with a knife.
5️⃣ Bake: Bake for 30-35 minutes or until a toothpick comes out mostly clean. Cool completely before slicing.
6️⃣ Enjoy: Cut into squares and serve. Store leftovers in the refrigerator.
