Brownies:
12 ounces semi-sweet or bittersweet chocolate chips
6 tablespoons unsalted butter, cut into cubes
¾ cup granulated sugar
1 teaspoon vanilla extract
3 eggs, room temperature
¼ cup unsweetened cocoa powder
⅓ cup cornstarch
½ teaspoon salt
1 cup mini semi-sweet chocolate chips
Cheesecake Layer:
8 ounces cream cheese, softened
½ cup granulated sugar
1 egg, room temperature
½ teaspoon vanilla extract
Directions:
Prep: Preheat the oven to 350°F. Spray a 9-inch square baking pan with cooking spray and line with parchment paper.
Brownie Batter: Melt chocolate chips and butter in the microwave, stirring every 30 seconds. Stir in sugar and vanilla. Add eggs one at a time, mixing well. Whisk together cocoa powder, cornstarch, and salt in a separate bowl and add to chocolate mixture. Stir until smooth and glossy. Mix in mini chocolate chips. Pour two-thirds of the batter into the prepared pan.
Cheesecake Layer: Beat cream cheese until fluffy. Add sugar, then egg and vanilla, mixing until smooth. Spread over the brownie layer.
