Ingredients
14 Slices of bacon
6 Thin cut boneless skinless chicken breasts
1 Small onion sliced thinly
½ c. Sugar free BBQ sauce divided
1 tbsp Olive oil
Salt and pepper to taste
Instructions
Cook 8 of the slices of bacon until crispy.
Heat 1 tbsp of olive oil in a skillet over medium-high heat.
Add the onions to the skillet, and cook until beginning to soften.
Preheat the oven to 400 degrees.
Crumble the cooked bacon, and place it into a small mixing bowl.
Add the cooked onions, and half of the BBQ sauce to the bowl, and stir to combine.
Apply salt and pepper to taste to both sides of the chicken breasts.
Place a tablespoon of the bacon mixture into the center of the chicken breast, and roll it tightly.
Wrap an uncooked piece of bacon around the outside of the rolled chicken breast, and place it on a baking sheet.
Repeat steps 8 and 9 untill you have stuffed and wrapped all of the chicken breasts.
Brush the chicken breasts with the remaning BBQ sauce.
Bake for 20 minutes.
Serve with your side of choice, enjoy!
