No Bake Cookie Dough Cheesecake
Ingredients:
For the Crust:
2 cups crushed chocolate chip cookies
1/2 cup unsalted butter, melted
For the Cookie Dough:
1/2 cup unsalted butter, softened
1/4 cup granulated sugar
1/2 cup light brown sugar, packed
2 tablespoons milk
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 cup mini chocolate chips
For the Cheesecake Filling:
16 ounces cream cheese, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract
1 cup heavy cream, whipped to stiff peaks
Directions:
Prepare the Crust: Mix the crushed cookies with melted butter. Press the mixture into the bottom of a springform pan. Chill in the refrigerator while preparing the filling.
Make the Cookie Dough: Cream together butter, granulated sugar, and brown sugar until light and fluffy. Mix in milk and vanilla extract. Gradually add flour and mix until combined. Stir in mini chocolate chips. Set aside.
Prepare the Cheesecake Filling: In a large bowl, beat the cream cheese, sugar, and vanilla extract until smooth and creamy. Gently fold in the whipped cream.
Assemble the Cheesecake: Spread half of the cheesecake filling over the crust. Drop spoonfuls of cookie dough over the filling. Cover with the remaining cheesecake filling. Smooth the top with a spatula.
Chill: Refrigerate the cheesecake for at least 4 hours, or overnight, until set.
Serve: Before serving, garnish with additional mini chocolate chips or cookie crumbs if desired
