Ingredients:
8 large flour tortillas
2/3 cup light brown sugar
1/8 teaspoon ground cinnamon
Vegetable oil for frying
8 oz cream cheese, softened
1/3 cup powdered sugar
1 1/2 teaspoon vanilla extract
1 cup heavy whipping cream, cold
1 can cherry pie filling
Instructions:
Cheesecake Filling: In a large bowl, beat cream cheese and powdered sugar with an electric mixer on medium speed until smooth. Add vanilla extract and heavy cream. Start on medium, then increase to high speed and beat until the mixture thickens. Place filling in a piping bag and refrigerate.
Tortilla Shells: Combine light brown sugar and cinnamon in a bowl. Using a 4-inch cookie cutter, cut circles from the tortillas.
Fry Shells: Heat about 1 inch of vegetable oil in a deep pan over medium heat. Fry tortilla circles briefly on one side, then fold using tongs and continue frying until crispy and golden. Immediately coat with the sugar-cinnamon mixture and place on an inverted muffin tin to cool.
