These Oreo Cheesecake Bites are perfect for any gathering or just a delightful way to treat yourself. They’re easy to make and even easier to disappear! Enjoy the creamy, crunchy sensations with every bite.
Ingredients:
For the Cheesecake Crust:
16 Oreos
For the Cheesecake Filling:
16 ounces cream cheese, softened (2- 8 ounce packages)
1/2 cup sugar
2 whole eggs
1 tsp vanilla extract
3/4 cup large and small Oreo cookie crumbs (about 6 Oreos)
Instructions:
Prep and Set: Preheat your oven to 350°F (175°C). Line a regular cupcake pan with 16 paper liners and place one Oreo cookie at the bottom of each liner.
Mix Filling: In a large bowl, blend the cream cheese, sugar, eggs, and vanilla extract with an electric mixer until smooth, about 2-3 minutes.
Incorporate Oreos: Fold in 3/4 cup of Oreo crumbs using a spatula to ensure even distribution.
Assemble: Spoon about two tablespoons of the cheesecake filling over each Oreo in the cupcake liners. Sprinkle a few Oreo crumbs on top of each.
Bake: Place in the oven and bake for 14-16 minutes, or until the centers are set but still slightly jiggly.
Cool: Allow to cool in the pan for 30 minutes, then remove and chill in the refrigerator for about 2 hours.
Garnish: Before serving, add a dollop of whipped cream and some crushed Oreos on top of each cheesecake bite for extra decadence.
