White Chocolate Raspberry Cake 

Ingredients:

For the Cake:
1 box (15.25 oz) white cake mix
1 box (3.4 oz) INSTANT white chocolate pudding mix (dry)
4 large eggs
1 cup vegetable oil
1/4 cup milk
1 cup full-fat sour cream
1 cup white chocolate chips
2 cups fresh raspberries, halved if large
For the Frosting and Topping:
8 oz cream cheese, softened
4 oz white chocolate baking bar, roughly chopped
1 tsp vanilla extract
3 cups confectioners’ sugar
1/4 cup heavy whipping cream (adjust as needed)
Fresh raspberries and white chocolate chips, for garnish

Instructions:

Prepare the Oven and Pan: Preheat to 350°F. Grease a 13×9 baking pan liberally with cooking spray or shortening and flour.
Mix the Cake: Combine cake mix, pudding powder, eggs, oil, milk, and sour cream with an electric mixer until smooth. Fold in white chocolate chips and raspberries by hand. Pour into the pan and smooth out.
Bake: Cook for 35-40 minutes or until a tester comes out clean. Cool completely.
Make Frosting: Melt white chocolate, cool slightly. Cream together with cream cheese and vanilla. Gradually add confectioners’ sugar and adjust consistency with heavy cream if necessary.
Decorate: Spread frosting over the cooled cake and garnish with raspberries and chocolate chips.
