Honey Lavender Cheesecake 

Ingredients:

1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
24 oz cream cheese, softened
1 cup granulated sugar
3 large eggs
1/2 cup sour cream
1/4 cup honey
1 tablespoon culinary lavender
1 teaspoon vanilla extract
Edible flowers, for garnish
Extra honey, for drizzling

Instructions:

Prepare the Pan: Preheat oven to 325°F (160°C). Grease a 9-inch springform pan.
Crust: In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press firmly into the bottom of your pan.
Filling: Beat cream cheese and sugar until smooth. Incorporate eggs one at a time, then mix in sour cream, honey, lavender, and vanilla.
Bake: Pour the mixture over the crust, smoothing the top. Bake for 45-50 minutes. The edges should be set but the center slightly wobbly.
Cool: Turn off the oven, leave the cheesecake inside for 1 hour with the door closed. Then, cool completely at room temperature and refrigerate for at least 4 hours.
Garnish: Before serving, decorate with edible flowers and a drizzle of honey.
