40 oz cream cheese, room temperature
1 3/4 cups sugar
3 tbsp all-purpose flour
1 tsp lemon zest
4 tsp vanilla extract
1/2 cup heavy cream
5 large eggs, room temperature
2 large egg yolks, room temperature
Instructions:
Crust: Preheat oven to 325°F. Mix crust ingredients and press into a springform pan. Bake for 8-10 minutes.
Filling: Reduce oven to 300°F. Blend cream cheese, sugar, and flour. Add lemon zest, vanilla, and cream. Mix in eggs and yolks one at a time.
Bake: Pour batter into crust. Place pan in a water bath and bake for about 2 hours until set but still jiggly.
Cool: Turn off oven, let sit for 30 mins, then crack oven door for another 30 mins. Chill in the fridge for at least 5 hours.
Serve: Remove from pan and serve with your favorite toppings.
