Ingredients:
1 pound chicken thighs, cut into 1-2″ pieces
3 tablespoons cornstarch
1 teaspoon salt
½ cup orange juice
2 tablespoons honey
2 tablespoons soy sauce
1 teaspoon grated ginger
1 teaspoon orange zest
2 tablespoons rice vinegar
2 teaspoons cornstarch mixed with 2 teaspoons of water (cornstarch slurry)
Green onions, for garnish
Sesame seeds, for garnish
Instructions:
In a bowl, mix the cornstarch and salt, then toss the chicken pieces until evenly coated.
Lightly spray the air fryer basket with oil and arrange the chicken in a single layer inside. You may need to cook the chicken in batches.
Lightly spray the chicken with oil. Air fry at 400°F for 9 minutes, shaking the basket 2-3 times during cooking. The chicken should be golden brown and crispy on the outside.
Transfer the cooked chicken to a bowl and repeat with the remaining batches.
While the chicken is cooking, prepare the orange sauce. In a saucepan, combine the orange juice, honey, soy sauce, grated ginger, orange zest, and rice vinegar. Bring to a simmer and cook for 3-5 minutes until slightly thickened.
Slowly pour in the cornstarch slurry while whisking, and continue to simmer until the sauce thickens to a desired consistency.
Toss the cooked chicken with the orange sauce until evenly coated.
Garnish with sesame seeds and sliced green onions. Serve with rice for a delicious meal!
