Ingredients:
1 cup unsalted butter, cut into pieces
1 cup granulated sugar
2 tablespoons water
1 teaspoon Kosher salt (or 1/2 teaspoon regular salt)
1 teaspoon vanilla extract
1 cup chocolate chips (milk chocolate or semi-sweet)
2-4 tablespoons chopped pecans or almonds
Instructions:
Prepare Pan: Butter or line a baking sheet with parchment paper.
Cook Toffee: In a medium, heavy-bottomed saucepan, combine butter, sugar, water, and salt over medium-low heat. Stir frequently until the butter melts and the sugar dissolves.
Monitor Temperature: Clip on a candy thermometer and simmer the mixture, stirring occasionally, until it reaches a deep amber color and the thermometer shows 285°-290°F (about 20 minutes). Immediately remove from heat and mix in vanilla extract.
Set Toffee: Pour the toffee onto the prepared baking sheet, allowing it to spread. Let cool for 5 minutes.
Add Chocolate and Nuts: Sprinkle chocolate chips over the toffee. After 10 minutes, when the chips have softened, spread them evenly with an offset spatula. Sprinkle chopped nuts on top.
