Bubblegum Cloud Fudge 

Ingredients:

21 1/4 ounces of White Chocolate
3/4 cup of Sweetened
Condensed Milk

4 1/2 ounces of Unsalted Butter
1 teaspoon of Bubble-Gum Flavoring
2 teaspoons of Vanilla Extract
3 drops of White Food Gel
3 drops of Pink Food Gel
1 cup of Mini Marshmallows
1/4 cup of Confetti Rainbow Sprinkles

Instructions:

Prepare the Tin: Line a 9×9-inch square baking tin with parchment paper.
Melt Chocolate Mixture: In a microwave-safe bowl, combine the white chocolate, sweetened condensed milk, and butter. Microwave in 40-second intervals, stirring each time until smooth.
Add Flavors and Colors: Mix in the bubble-gum flavoring and vanilla extract. Optionally, divide the mixture for a marbled effect using the food gels.
Combine with Marshmallows: Fold in the mini marshmallows evenly.
Pour and Chill: Pour into the prepared tin, smooth the top, and sprinkle with confetti rainbow sprinkles. Refrigerate for about 2 hours until firm.
Serve: Lift out using the parchment paper, cut into squares, and enjoy the burst of bubblegum flavor in each bite!

Why is my marshmallow fudge soft?

The amount of time you cook fudge directly affects its firmness. Too little time and the water won’t evaporate, causing the fudge to be soft.

What does cream of tartar do in fudge?

If you add a teaspoon of Cream of Tartar to fudge this will inhibit the formation of crystals to a degree but please be aware THIS DOES NOT REPLACE THE BEATING PROCESS!

How do you make fudge creamy and not grainy?

A lot of big crystals in fudge makes it grainy. By letting the fudge cool without stirring, you avoid creating seed crystals. Stirring would help sucrose molecules “find” one another and start forming crystals
