Ingredients:
1 1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1 1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp salt
3/4 cup vegetable oil
1 cup granulated sugar
2 large eggs
1 1/2 cups grated carrots
1/2 cup chopped walnuts (optional)
Directions:
Preheat oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
In a large bowl, beat together oil and sugar. Add eggs one at a time, beating well after each addition.
Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
Fold in grated carrots and walnuts, if using.
Pour batter into the prepared loaf pan and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
Allow to cool before slicing and serving.
