Serve this cake warm or at room temperature, perhaps with a dollop of whipped cream or a scoop of vanilla ice cream for added indulgence.
Ingredients:
2 cups all-purpose flour
1 large apple, peeled and chopped
1 cup vegetable oil
1 cup dark brown sugar
1/2 cup granulated white sugar
1/2 cup walnuts, chopped
2 large eggs
1 tablespoon ground cinnamon
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
Preparation:
Preheat oven to 350°F (175°C) and lightly grease a 9-inch round cake pan.
In a medium bowl, whisk together eggs and oil until smooth.
Add cinnamon, both sugars, and vanilla extract, mixing until well combined.
Sift in flour, salt, baking soda, and baking powder, stirring until just combined.
Fold in the chopped apples and walnuts.
Pour the batter into the prepared cake pan.
Bake for about 45 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
