Ingredients
COFFEE CAKE
2 cups Bisquick
2/3 cup milk
2 tablespoons Stevia or sugar
1 large egg
FILLING
20 oz canned pie filling (your choice of flavor)
TOPPING
1/3 cup Bisquick
1/3 cup packed brown sugar
1/2 teaspoon ground cinnamon
2 tablespoons firm butter
Directions
Preheat your oven to 375°F (190°C). In a mixing bowl, combine the Bisquick, milk, Stevia or sugar, and egg. Mix until you have a smooth batter.
Prepare a 9″ springform pan by spraying it with non-stick spray. Pour the batter into the pan, spreading it out evenly to cover the bottom.
Take your choice of pie filling and spread it evenly over the prepared batter in the pan.
In a small bowl, mix together the additional Bisquick, brown sugar, and cinnamon for the topping. Cut the firm butter into this mixture until crumbly.
Evenly sprinkle the crumbly topping over the pie filling layer.
Bake in the preheated oven for about 22 minutes, or until the top is golden brown and the cake is set.
Allow the coffee cake to cool slightly before serving, ensuring it is warm and inviting.
