Ingredients:
1 zucchini
2 potatoes
Handful of chives
1 egg
1/2 cup flour
1 teaspoon baking powder
Salad and pepper, garlic powder ( as preferred)
2 tablespoons extra virgin olive oil
Method:
1.Grate 1 zucchini sprinkle salt and let it rest for 10 minutes
2. Squeeze the zucchini to remove liquid
3. Grate potatoes and strain any excess liquid
4. To a bowl add zucchini, potatoes, chopped chives, flour, baking powder, salt pepper, garlic powder and egg and combine all together.
5. Add extra virgin olive oil to a skillet and warm it up
6. Add scoop of batter to the hot pan and fry each side for 5 minutes or until golden on a low heat.
7. Enjoy with Tzatziki ( yogurt & dill & cucumber)
