Ingredients:
1 cup butter, softened
2 cups sugar, plus extra for rolling
2 eggs
1 tsp vanilla extract
3/4 cup unsweetened cocoa powder
2 cups flour
1 tsp baking soda
1/2 tsp salt
Instructions:
Cream Butter and Sugar: Preheat your oven to 350°F (175°C). In the bowl of a mixer, cream together the butter and 2 cups of sugar until smooth.
Add Wet Ingredients: Beat in the eggs and vanilla extract until the batter is soft and fluffy.
Combine Dry Ingredients: Add the cocoa powder, flour, baking soda, and salt to the creamed mixture. Mix until the dough is thick and well-formed.
Shape Cookies: Roll a teaspoonful of the dough into a small ball, then roll the ball in granulated sugar to coat.
Bake: Place the dough balls two inches apart on an ungreased cookie sheet. Bake for 8 minutes for smaller cookies or up to 10 minutes for larger cookies.
Cool: Allow the cookies to cool on the sheet for one minute before transferring them to a cooling rack. If your kitchen is warm, keep the dough in the refrigerator between batches.
