Pecan Pie Bars are my favorite snack of the season! They have cinnamon shortbread crust and the pecan filling is so yummy. Full recipe below.
Ingredients
Cinnamon Shortbread Crust:
* 16 tbsp sticks unsalted butter, softened
* 3/4 cup light brown sugar
* 2 1/2 cup flour
* 1 tbsp cinnamon
* 1 tsp salt
Pecan Pie Filling:
* 8 tbsp unsalted butter
* 1 cup light brown sugar
* 1/3 cup honey
* 3 tbsp heavy cream
* 1 tsp vanilla
* 2 1/4 cup chopped pecans
Optional Topping: whip cream or vanilla ice-cream
Directions
* Preheat oven to 350 degrees F.
* In a large mixing bowl cream together butter and brown sugar. Add in flour, cinnamon and salt and beat till it’s a crumble texture. In a 9×9 baking dish lined with parchment paper press down shortbread crust evenly and bake for 15 minutes. When crust is done baking remove and set aside.
* While shortbread crust is baking make pecan pie filling. Melt butter in a medium saucepan or skillet, add in brown sugar, honey, heavy cream, and vanilla extract. Stir for a couple minutes on medium heat and add in the chopped pecans. Stir for another minute and pour pecan pie filling over baked crust. Put back in oven for another 15-20 minutes to finish off.
* Remove and let cool. Slice and enjoy!
