Ingredients:
2-3 ripe bananas, mashed
1/2 cup crushed pineapple, drained
1/2 cup shredded coconut
1/2 cup chopped macadamia nuts (optional)
1/3 cup melted butter
1 teaspoon vanilla extract
1 cup granulated sugar
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 large eggs
Instructions:
Preheat and Prep: Set your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan to prepare for baking.
Mix Fruits and Nuts: In a large bowl, blend together the mashed bananas, crushed pineapple, shredded coconut, and chopped macadamia nuts (if using) until well combined.
Combine Wet Ingredients: In a separate bowl, whisk the melted butter, vanilla extract, and sugar. Fold this mixture into the banana mixture, ensuring a consistent texture.
Add Eggs: Integrate the eggs into the banana mixture, stirring thoroughly.
Dry Ingredients: In another mixing bowl, whisk together the flour, baking soda, and salt. Gradually incorporate the dry ingredients into the wet ingredients, mixing until just combined to avoid overmixing.
Bake: Pour the batter into your prepared loaf pan, smoothing the top with a spatula. Place in the oven and bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
Cool: Let the bread cool in the pan for 10 minutes before removing. Then transfer to a wire rack to cool completely.
Enjoy your slice of Hawaiian paradise with this banana bread, whether it’s a sunny morning breakfast or a sweet afternoon snack!
