I have made this delicious and creamy strawberry sago with the addition of coconut yoghurt in vanilla flavour.

To make the same:
Step 1: Soak for 1 hour 1/2 cup tapioca pearls in 3 cups cold water.
Step 2: Boil tapioca pearls in 4 cups of water for 15 minutes continuously stirring.
Step 3: Rinse cooked tapioca pearls in cold water.
Step 4: Blend in a high speed blender:
4 large strawberries
1/2 pink pitaya fruit
3 tablespoons vanilla coconut yogurt
1 tablespoon maple syrup
1/4 cup coconut milk
Step 5: Mix tapioca pearls with blended strawberry mixture and add 2 chopped strawberries.
Step 6: Serve in a glass with 2 tablespoons of Coconut Yoghurt on top and fresh strawberries . Drizzle with honey/maple syrup.
