Lemon Pound Cake Cookies

Ingredients

⅔ C. Granulated sugar

⅔ C. Butter unsalted and softened

2 C. All purpose flour

2 tsp. Baking powder

2 Large eggs

2 Tbsp. Fresh lemon juice

1 tsp. Vanilla extract

For the glaze:

½ C. Powdered sugar

Milk to taste

1 tsp. Vanilla extract

Instructions

Add the sugar and butter to a mixing bowl and beat until smooth and creamy.

Mix in the flour, baking powder, eggs, lemon juice and 1 tsp vanilla. Beat on high until well combined.

Form the dough into 24 evenly sized balls, and flatten them slightly with the palm of your hand.

Bake for 10-12 minutes until cooked through and browned on the bottom.

Mix together the ingredients for the glaze until smooth, and drizzle over the warm cookies.

Let sit for several minutes before serving.
