Have you see the amazing Christmas 🎄 range of teas from yet? It’s absolutely amazing! Today I used Christmas Breakfast Loose Leaf Tea from the range to make this delicious ginger bread cookies and our house smells like Christmas is here.
You will need following ingredients:
Christmas Breakfast Loose Leaf Tea
280g self raising flour
150g honey
40g icing sugar
60g butter
1 egg
1 tsp baking soda
1 tsp cinnamon powder
1 tsp ground cloves
2 tbsp cacao powder
1/2 tsp nutmeg
Method:
1. Pre heat oven at 180 C
2. Brew 1 cup Christmas Breakfast Loose Leaf tea.
1 tsp per cup, 2-4 mins, 100 C water and let it cool
3. Combine self raising flour, icing sugar, baking soda, cinnamon powder, cacao powder, cloves and nutmeg
4. Melt the butter and let it cool
5. Warm the honey on the stove top and let it cool
6. Combine butter and honey together and add 2 tbsp of brewed Christmas Breakfast tea, then add to the dry ingredients.
7. Add a lightly beaten egg to all the ingredients and combine to form a dough.
8. Add extra flour if the dough is too sticky
9. Place the dough in the fridge for 1 hour or overnight
10. Roll out the dough and cut out your favourite Christmas shapes with a cookie cutter
11. Bake the biscuits for 20 min
12. Decorate the biscuits with icing sugar
