Ingredients
3/4 cup white sugar
1/2 cup Original Bisquick™ mix
1/4 cup salted butter, melted
2 cups milk
1 1/2 teaspoons vanilla
4 eggs
1 cup flaked or shredded coconut
Directions
Start by preheating your oven to 350°F (175°C). Prepare a 10-inch pie plate by greasing it well to prevent sticking.
In a medium mixing bowl, combine the sugar, Bisquick mix, melted butter, milk, vanilla, and eggs. Whisk together until the mixture is smooth and thoroughly blended.
Pour the mixture into the prepared pie plate. Remember not to fill it to the very top as the mixture will puff up during baking. Allow it to sit for about 5 minutes to let the ingredients settle.
Sprinkle the flaked or shredded coconut evenly over the top of the pie mixture.
Place the pie plate on a foil-lined baking sheet with a raised edge to catch any spills. Position it in the center of the middle rack in your oven.
Bake for 35-45 minutes, or until the pie’s top is golden brown, the center slightly jiggles, and a knife inserted near the edge comes out clean.
Remove the pie from the oven and let it cool completely. The pie will deflate somewhat as it cools, which is normal.
Serve the pie at room temperature for the best flavor and texture. Store any leftovers in the refrigerator.
