Beetroots are excellent source of iron and vitamin c so I love adding them to my salads. Who loves adding beets to their diet?
To make the same salad you will need following ingredients:
2 beetroots
1 cup spinach
1/2 pink grapefruit
1/2 cup chickpeas
1 cucumber
1/4 red onion
1/2 cup feta cheese
1/2 teaspoon lemon zest
1 tablespoon maple syrup
1-2 teaspoons Himalayan salt
3/4-1 cup extra virgin olive oil
1/2 lemon juice
1 teaspoon thyme
1 teaspoon rosemary
1. Peel 2 beetroots and cut them into cubes
2. Drizzled them with 1/4 cup extra virgin olive oil, 1/2 teaspoon Himalayan salt, 1 tablespoon lemon zest, 1 teaspoon thyme and 1 teaspoons rosemary.
3. Roast 2 beetroot in cubes at 190C for 30 min
4. To a salad bowl add 1 cup spinach, 1 chopped cucumber, 1/4 red onion, 1/3 cup feta cheese, roasted beetroot, 1/2 cup chickpeas and 1/2 grapefruit segments.
5. Prepare salad dressing by combining: 1/3 cup extra virgin olive oil, 1/2 lemon juice, 1/3 cup dill, 1 teaspoon salt and pepper, 1 teaspoon mince garlic, 1 tablespoon maple syrup
6. Pour the dressing on top, mix it all together and enjoy
