My daughter has been asking me for a upside down pineapple 🍍 cake for a while so I thought I will whip these out for breakfast this morning.
To make the same:
1. Drain the liquid from 1 can of pineapple rings.
2. Make the batter by combining dry and wet ingredients:
Dry ingredients:
1 1/2 cups self raising flour
Pinch of salt
Wet ingredients:
1 1/4 plant based milk
1 egg
1 teaspoon vanilla essence
3 tablespoons melted butter
3. Heat up a none stick pan with 1 tablespoon coconut oil and sprinkle 2 tablespoons coconut sugar on top on medium- high heat.
4. Place drained pineapple rings on top of heated oil and fry on low heat for 3 minutes.
5. Pour the batter on top of each pineapple ring; cook until bubbles form; flip each pancake and cook until golden on a low heat setting.
6. Enjoy with maple syrup and coconut yoghurt.
