Ingredients:
3-4 baked sweet potatoes
1 tsp nutmeg
1/2 tsp cinnamon
1/2 tsp allspice
1 tsp vanilla extract
1 tsp lemon extract (optional)
1 cup evaporated milk (more if needed)
1 cup sugar
1/2 cup brown sugar
4 large eggs
1 stick butter, softened
2 regular pie shells or 1 deep dish pie shell
Directions:
Prep Sweet Potatoes: Bake or boil the sweet potatoes until tender. Once cooked, peel and thoroughly mash them.
Preheat Oven & Prep Pie Shells: Preheat your oven to 350°F (175°C). Pre-bake the pie shells slightly to prevent them from becoming soggy.
Mix Ingredients: In a large bowl, blend the mashed sweet potatoes with nutmeg, cinnamon, allspice, vanilla and lemon extracts, evaporated milk, sugars, eggs, and butter. Whisk until the mixture is smooth and free of lumps.
Fill Pie Shells: Distribute the filling evenly into the pie shells, or fill the deep dish shell completely.
Bake: Place the pies in the oven and bake for about 50 minutes, or until the filling is firm and the pies are fully set.
