Ingredients:
1 lb ground beef
1 package taco seasoning
4 oz. cream cheese
12 large pasta shells
1 cup salsa
1 cup taco sauce
1/2 cup cheddar cheese, shredded
1/2 cup Monterey jack cheese, shredded
3 green onions, chopped
1/3 cup water
Directions:
Preheat the oven to 350°F (177°C). Bring a large pot of salted water to a boil for the pasta.
In a skillet over medium-high heat, cook the ground beef until browned, breaking it up with a wooden spoon. Drain if desired.
Return the beef to the skillet, add taco seasoning and 1/3 cup water, and cook until the liquid has evaporated.
Stir in the cream cheese until melted and smooth, then remove from heat.
Cook the pasta shells according to package instructions, drain, and toss with a little olive oil or butter to prevent sticking.
Spread salsa on the bottom of a 9×13 baking dish.
Stuff each shell with the meat mixture and place in the baking dish.
Pour taco sauce over the stuffed shells and cover the dish with aluminum foil.
Bake covered for 30 minutes, then remove the foil, sprinkle with both cheeses, and bake for another 5-6 minutes until the cheese is melted.
Garnish with chopped green onions and serve.
